Ingredients of the Hydrox Cookies Recipe

For chocolate wafers

  • Unsalted Butter (almost 8 tablespoons, 4 ounces; the butter must be soft)
  • Sugar (almost ½ cup, 100g)
  • Golden syrup (2 ounces; 55g)
  • Baking soda (1/2 tablespoon)
  • Kosher salt (1g; ¼ tablespoon; you can also use table salt in the same quantity)
  • Coconut extract (1/4 tablespoon; this ingredient is optional)
  • All-purpose flour (165g; 5¾ ounces)
  • Cocoa powder (35g; almost 1/3 cup and a tablespoon)

For the Filling

  • Unsalted butter (6 ounces; 170g)
  • Vanilla extract (1 teaspoon)
  • Kosher salt (1/8 teaspoon)
  • Powdered sugar (8 ½ ounces; 240g)

Procedure

Making chocolate wafers

Add all the ingredients mentioned for the chocolate wafer in a bowl, except all-purpose flour and cocoa powder. At least beat all the ingredients for 5 minutes, all you need to do is to beat it until you attain a fluffy mixture.

Don’t let the dough accumulate at the sides of the bowl. Scrap the mixture from the sides of the bowl during beating, frequently.

Strain all-purpose flour and cocoa powder. Sprinkle this sifted mixture over the butter mixture already prepared. Adjust the beater at a slow speed, as a high speed would cause the powdered mix to blow away.

Beat the mixture until a smooth dough is formed. You can use it after 30 minutes of cooling at room temperature.

The dough for chocolate wafers is ready! Let’s bake them. Dust the surface that you are using with cocoa powder. Take almost a 7-inch square of dough. Roll it neatly and carefully.

Keep sprinkling cocoa powder while rolling the dough. Roll it until it becomes 1/8 inch. Once you are done with their rolling, brush away the excess cocoa powder.

Re-knead the scraps left behind. Make rolls with all the dough. Bake them in a preheated oven at 350°F for almost 15 minutes. After baking, let them cool at room temperature.

Making the filling

The first thing that you need to do is to melt the butter completely and carefully. Be careful not to burn the edges of the pan while melting butter, as it will result in a burning smell in the melted butter.

Cook this butter until it settles down softly.

Add vanilla essence, kosher salt, and powdered sugar. Beat it until the mixture becomes fluffy and soft. You’ve to use this filling immediately.

You cannot keep it for a long time, so make sure that everything else is ready and you start filling the chocolate wafers immediately.

Make sure you fill the wafers generously. Don’t let your homemade hydrox cookies turn into a flop recipe just by showing recklessness in this step. Fill all the cookies carefully, and sandwich them.
